For a delightful vegetarian dining experience, try the combination of a refreshing cucumber yogurt curry and a spicy gooseberry pickle. This meal, served with plain rice, offers a balance of flavors—cool and creamy curry that tempers the fiery heat of the gooseberry pickle, making it perfect for enjoying in warm weather.

The hot gooseberry pickle is quick to prepare, requiring a mere 10 minutes each for prep, cooking, and pickling, with a chilling time of at least two hours. It serves four and starts with 250 grams of gooseberries. You’ll need 250 milliliters each of apple cider vinegar and water, a tablespoon of caster sugar, a teaspoon of salt, and fenugreek seeds. Add in a tablespoon of mustard seeds, four crushed garlic cloves, three tablespoons of vegetable oil, and four tablespoons of Kashmiri chili powder. Begin by thoroughly washing the gooseberries and allowing them to dry. In a saucepan, combine vinegar, water, sugar, and salt, bringing it to a simmer until dissolved. After adding the gooseberries, remove from heat and let them soak for 10 minutes.

While the gooseberries steep, dry-roast the fenugreek seeds for about a minute until fragrant, then let them cool. Grind these with mustard seeds and garlic to create a coarse paste. Drain the gooseberries and mix them with the spice paste, oil, and chili powder, seasoning with additional salt to taste before refrigerating for a minimum of two hours.

The cucumber yogurt curry is equally simple, requiring 15 minutes of prep and 10 minutes to cook, serving four. Ingredients include two cucumbers, 80 grams of soaked and drained coconut, two chopped green chilies, four garlic cloves, 30 grams of fresh coriander, half a teaspoon of black peppercorns, two teaspoons of sesame seeds, and 100 grams of natural yogurt. For tempering, use four teaspoons of vegetable or coconut oil, 10 fresh curry leaves, optional fenugreek seeds, two teaspoons each of mustard and cumin seeds, and three dried red chilies. Start by peeling and crushing the cucumbers, blending a portion with the coconut, chilies, garlic, coriander, peppercorns, and sesame seeds until smooth. Whisk the yogurt with water for a creamy texture and stir in the cucumber paste and slices. Chill this mixture before serving.

Complete the dish by preparing the tempering. Heat oil and fry curry leaves until they sizzle, adding fenugreek, mustard, and cumin seeds along with red chilies, being cautious of splattering spices. Pour this hot mixture over the chilled curry just before serving. Pair the cucumber yogurt curry with plain rice and the prepared gooseberry pickle for a meal that delights with its contrast of cool and spicy flavors.
